Beth Conlon, PhD, RDN
Beth Conlon, PhD, RDN, is a distinguished nutrition scientist and clinician with over 14 years of experience in clinical and translational research. Her academic journey includes a PhD in Clinical Investigation from Albert Einstein College of Medicine, where she was awarded a Predoctoral Fellowship as an NIH-NCATS Clinical and Translational Science scholar. Dr. Conlon's research focused on pediatric weight management interventions in an urban safety-net primary care setting. She also holds a Master of Science in Nutrition from Marywood University, where she graduated with honors, and completed her Dietetic Internship at Saint Elizabeth University. Following her doctoral studies, she underwent postdoctoral training at Nestle Health Science, concentrating on research, development, and product innovation.
In academia, Dr. Conlon has held faculty positions at both Saint Elizabeth University and New York University as an Assistant and Adjunct Professor in Foods and Nutrition. Her scholarly contributions to the field include over 15 peer-reviewed research articles and several chapters in academic textbooks, along with a recent chapter aimed at a general audience that showcases her commitment to making complex scientific concepts accessible to the public.
Currently, as the founder of From the Start Nutrition LLC, Dr. Conlon applies her extensive research expertise to clinical practice, specializing in pediatric feeding disorders, eating disorders, and various nutrition-related challenges across the lifespan. Her approach combines evidence-based practices with personalized care, effectively translating research outcomes into real-world applications. Dr. Conlon's unique blend of academic rigor, clinical experience, and research positions her as a leader in advancing nutritional science and improving patient and consumer outcomes.
